Weed Recipes: Cannabis Soup
With fall finally here we have the chance to kick back and relax indoors on some of those particularly cold and dreary autumn days with a comforting bowl of tasty soup. Add a little cannabutter from your favorite strain to the equation and you’re in for a real treat! In the spirit of the season, check out this really quick and simple recipe for a flavorful cannabis and bell pepper soup for you and your fellow enthusiasts to enjoy.
Ingredients:
2 tablespoons of cannabutter from your preferred strain
1 gram of cannabis flower
Shelled hemp seeds (optional)
Vegetable stock
Greek yogurt
Red bell pepper
Yellow bell pepper
A carrot
An onion
Celery
Chives
3 cloves of garlic
Kosher salt and freshly ground pepper to taste
Extra virgin olive oil
Vinegar
Tools Needed:
A pan
A blender
A wooden spoon
A knife
Process:
Start off by cutting open the bell peppers and then removing the seeds then chop the peppers into as many pieces as you can. Next you’ll want to chop up your carrots, celery, and onions and set them aside together for now. At this point you’ll also want to slice the cloves of garlic so that they are ready to go when needed.
Next, heat up the olive oil in the pan and begin adding the sliced garlic, onions, carrots, and celery and sauté the veggies together in the pan for a just few minutes. Once nice and sautéed, add two tablespoons of your cannabutter and mix them up nicely together. When the cannabutter has been incorporated into the mix add the bell peppers, season them with kosher salt and freshly ground pepper as per your taste and cook the peppers down for a bit.
As the bell peppers are cooking down, chop up the cannabis flower and and sauté it in the pan along with the vegetables for about 5 to 8 minutes so they all blend together well. While the mix is cooking, you can begin preparing the garnish for the soup by finely slicing up some yellow and red bell peppers along with the chives and tossing them with some vinegar, salt, and pepper.
Now add the vegetable stock to the cooking vegetables and season some more with kosher salt and pepper to your liking. When you are done adding the seasoning, bring the entire mixture to a boil and then let it simmer for a few minutes. Once it has cooked completely, remove it from the heat and pour it in your blender to puree it into the soup. Once you are done pureeing the mix you should end up with a delicious, creamy, and rich orange colored soup. You can then top it off with a dollop of Greek yogurt and garnish with the chives and sliced bell peppers. Optionally, you can also sprinkle some shelled hemp seeds over the top for some added texture and your delicious cannabis and bell pepper soup is ready for you to dig in!
