HAPPY RATATOUILLE

I am what I like to call a “layer style chef.” I add a few extra ingredients to pump up the colors and flavors in my dishes! Which is why my Happy Ratatouille is one of my all-time favorite recipes – as its ALL about layers !
PREP : 15 minutes
COOK : 60 minutes
HAPPY : 1 hr 15 min
YIELDS : 8 Servings
INGREDIENTS :
2 cups tomato sauce (organic best)
2 cups chopped tomatoes (small, diced)
1 garlic (whole, chopped)
1 cup basil (shredded)
1/4 cup red onion (chopped)
1/4 cup white onion (chopped)
1/4 cup green onions (chopped)
2 tbsp CANNABIS INFUSED olive oil
1 eggplant (thin eggplant, thin sliced)
1 zucchini (thin sliced)
1 yellow squash (thin sliced)
1 sweet potato (medium sized, thin sliced)
1/3 cup crumbled feta cheese
freshly grated black pepper to taste
olive oil for cooking (cooking spray)
DIRECTIONS :
– Preheat oven at 375 degrees Fahrenheit. Bring 2 cups of water to a rolling boil. Season with salt. Slice sweet potato, boil for 8 minutes and cool down, slice your cooked sweet potatoes and the rest of the vegetables – zucchini, squash, eggplant, onions, garlic, tomatoes.
– Spray a 9″ round baking dish with cooking spray. Spread layer of tomato sauce, chopped tomatoes, chopped garlic, red onions, white onions, basil, feta, grated pepper and CANNABIS INFUSED olive oil. Mix well, leaving an even spread.
– Layer sliced veggies on top. I also love to do this dish as Remy did, in the Disney movie ‘Ratatouille’ (one of my favorites), making a spiral stack of the slices of delicious veggies for presentation. I do them eggplant, yellow squash, sweet potato, zucchini – step and repeat. ;-D
– Cover and bake for 50-60 minutes or until the vegetables are tender. *Tomato sauce will be bubbling!
Let this Deliciously Dosed Dish cool for 5 minutes. Serve with a side of Toasted Garlic French Bread.
